It's been a hot minute (as the kids say nowadays) since I put a new recipe on here! Recently, I found myself craving pancakes one morning but didn't want to go to all the trouble of making a huge batch. Not only would my lack of portion control pose a problem, but there would be many measuring spoons and bowls and cups to wash afterwards.
I came across this great recipe, titled "Lonely Girl Pancakes", and modified it so it only had six essential ingredients! It makes 3-4 pancakes depending on their sizes, so hopefully I'll be able to make more of them in college whenever I'm in the mood for a quick and filling breakfast.
Ingredients
1/4 cup all-purpose or whole wheat flour
1 tsp baking powder
1/4 cup milk
1 egg
A pinch of salt
1/2 or 3/4 banana (depending on preferred sweetness, and save the rest of the banana to decorate on top!)
Optional Toppings
Banana slices
Berries
Shredded coconut
Honey
Directions
Mix the dry ingredients together in a large measuring cup or bowl.
Mash the banana in a bowl, then add the rest of the wet ingredients and mix until combined.
Pour the wet ingredients into the dry ingredients, and stir until combined.
Lightly grease a griddle or pan and heat to medium temperature.
Cook until bubbles form on the surface, flip, and cook the other side until lightly brown.
