BREAKFAST: Banana Pancakes!

It's been a hot minute (as the kids say nowadays) since I put a new recipe on here! Recently, I found myself craving pancakes one morning but didn't want to go to all the trouble of making a huge batch. Not only would my lack of portion control pose a problem, but there would be many measuring spoons and bowls and cups to wash afterwards.


I came across this great recipe, titled "Lonely Girl Pancakes", and modified it so it only had six essential ingredients! It makes 3-4 pancakes depending on their sizes, so hopefully I'll be able to make more of them in college whenever I'm in the mood for a quick and filling breakfast.


Ingredients

  • 1/4 cup all-purpose or whole wheat flour

  • 1 tsp baking powder

  • 1/4 cup milk

  • 1 egg

  • A pinch of salt

  • 1/2 or 3/4 banana (depending on preferred sweetness, and save the rest of the banana to decorate on top!)

Optional Toppings

  • Banana slices

  • Berries

  • Shredded coconut

  • Honey

Directions

  1. Mix the dry ingredients together in a large measuring cup or bowl.

  2. Mash the banana in a bowl, then add the rest of the wet ingredients and mix until combined.

  3. Pour the wet ingredients into the dry ingredients, and stir until combined.

  4. Lightly grease a griddle or pan and heat to medium temperature.

  5. Cook until bubbles form on the surface, flip, and cook the other side until lightly brown.
