BREAKFAST: Cranberry Pumpkin Seed Granola

Granola recipe 2.0!! (It looks pretty much the same as the toasted coconut and almond granola, so I neglected to include a picture.)


Ingredients:

  • 2 cups rolled oats

  • 1/2 cup sliced raw almonds

  • 1/2 cup pumpkin seeds

  • 1/2 cup dried cranberries

  • 1/2 cup coconut flakes

  • 1 pinch sea salt

  • 1 tsp cinnamon

  • 4 tbsp honey

  • 1 tsp vanilla extract

  • 2 tbsp coconut oil

  • 1 tbsp ground flax seeds

Directions:

  1. Preheat the oven to 300 degrees Fahrenheit.

  2. Place the oats, nuts, seeds, sea salt, coconut flakes, ground flax seeds, and cinnamon in a bowl and mix well.

  3. Add the honey, vanilla extract, and coconut oil (**in that order**) and mix until well combined.

  4. Spread the mixture onto a baking tray lined with parchment paper.

  5. Bake for 10-15 minutes, stirring the mixture halfway.

  6. Once the granola has cooled, add in the cranberries.
