BREAKFAST: Vanilla Chia Seed Pudding

Happy belated Mother's Day! I hope that yesterday, your moms all felt especially loved and especially appreciated. Below is the recipe for the chia seed pudding I made as part of my mom's breakfast yesterday:

It did act as a side dish to some blueberry pancakes, but it's wonderful as is and makes for a super quick and nutritious breakfast you can grab on your way out the door if needed.


The texture might be...surprising(?) for first-timers, but there are so many variations on how to make chia seed pudding that there's surely a version that works for you. As for this one, it's a simple vanilla chia pudding that you can top with yogurt and/or fresh fruit.


Ingredients


- 1 cup milk (I used sweetened almond milk)

- 3 tbsp chia seeds

- 1/4 tsp pure vanilla extract

- 1/8 tsp cinnamon


Recipe


1. In a medium bowl, whisk all the ingredients together. Let sit for 10 minutes, then stir again. Cover and refrigerate for at least two hours, allowing the chia seeds to gel up (they'll expand to two times their size!).

2. Before eating, top with yogurt (pictured: coconut yogurt), fresh fruit, granola, or any other toppings of your choice. Enjoy!
